  Glyko Sykalaki : Greek Spoon Sweet In the late 1980s had the distinct pleasure of living for nearly four years on the sun-drenched island of Cyprus. Like almost anywhere in the Mediterranean, fig trees were omnipresent. This fig preparation is traditionally served in crystal bowls to welcome guests. The best spoon sweet has crunchy figs that are still brightly coloured, stewed in a thick syrup that is not overly sweet. You don’t need a silver fork to eat good food. ~ Paul Prudhomme Ingredients 10 pounds Fresh figs, washed and whole 4 1/2 cups Sugar 10 1/2 cups Water 8 Tbsp Bottled Lemon Juice Cinnamon stick Method: Blanch the figs in boiling water. Bring the sugar dissolved in 10 1/2 cups of water to a gentle boil and then add figs. Boil the syrup for 5 minutes. Add 2 tablespoons lemon juice to the bottom of each quart jar, or 1 tablespoon to each pint jar. Pack hot figs into jars. Ladle hot syrup over figs, still leaving 1/4" headspace.
