In the late 1980s had the distinct pleasure of living for nearly four years on the sun-drenched island of Cyprus. Like almost anywhere in the Mediterranean, fig trees were omnipresent. This fig preparation is traditionally served in crystal bowls to welcome guests. The best spoon sweet has crunchy figs that are still brightly coloured, stewed in a thick syrup that is not overly sweet.

Ingredients

  1. 10 pounds Fresh figs, washed and whole
  2. 4 1/2 cups Sugar
  3. 10 1/2 cups Water
  4. 8 Tbsp Bottled Lemon Juice
  5. Cinnamon stick



Method:

  1. Blanch the figs in boiling water.
  2. Bring the sugar dissolved in 10 1/2 cups of water to a gentle boil and then add figs. Boil the syrup for 5 minutes.
  3. Add 2 tablespoons lemon juice to the bottom of each quart jar, or 1 tablespoon to each pint jar.
  4. Pack hot figs into jars. Ladle hot syrup over figs, still leaving 1/4" headspace.
  5. Use a plastic canning knife to remove air bubbles. Wipe the glass rim with a clean wet rag and add 2-piece lids. Adjust to finger tightness.
  6. Immerse fully in boiling water in a water bath canner. Let it sit for at least 10 minutes on rolling boil
  7. Remove jars from water with a canning jar lifter and place on a folded towel on the counter or table. Do not move for at least 24 hours.
  8. Check to make sure jars are sealed before storing in a cool dry place in your pantry.
  9. If jars are not pressure sealed, store in the fridge and use within 2 weeks.
